    SUCH a good seminar! (I attended a live seminar and also purchased the recording.) I came away with pages and pages of notes, but more significantly, with CONFIDENCE and a PLAN! What struck me the most was the concept of having an “emergency fund” of food in the freezer. Since then, I’ve been batch cooking and stockpiling: lasagnas, soup bases, casseroles, pre-cooked meat (unseasoned and marinated). This has made such a difference for my family. As a single mom, my time in the kitchen is limited, but I still want my children to eat delicious, wholesome food. Freezer Batch Cooking is the answer! It has also allowed me to spontaneously have company over and share meals with those in need. My goals for this next year are to continue stockpiling and to include things like bread maker mixes and ready-to-bake cookies. If you want to regain some sanity in your meal planning, you need to listen to this!
